Smoked venison meatloaf is a hearty way to make a comforting dinner with a little extra flavor. These recipes offer practical ideas for pairing venison with seasonings, sauces, and other simple ingredients. Whether you’re planning a family meal or using up ground venison, you’ll find plenty of inspiration to try.
Helpful Tips Before You Start
A few simple steps can help your smoked venison meatloaf stay moist and cook evenly.
Add Fat for a Juicier Loaf
Venison is lean, so combine it with ground pork, beef, or another source of fat. This helps keep the meatloaf tender during the long smoke.
Mix Gently
Combine the ingredients just until they come together. Overmixing can make the loaf dense and tough.
Use a Meat Thermometer
Check the temperature in the center of the loaf rather than relying on cooking time alone. Cook ground venison to 160°F for food safety.
Let It Rest Before Slicing
Rest the meatloaf for about 10 minutes after smoking. This gives the juices time to settle and helps the slices hold together.
Classic Hickory-Smoked Venison Meatloaf with Brown Sugar Tomato Glaze
This venison meatloaf gets its hearty texture from a mix of lean ground venison and ground pork. Hickory smoke adds a savory, wood-fired flavor, while the brown sugar tomato glaze brings a sweet-tangy finish.
It’s a cozy main dish for a weekend dinner or a casual gathering. Shape the loaf with a slight dip along the top so the glaze settles in as it cooks, and use a meat thermometer to keep the venison moist.

Classic Hickory-Smoked Venison Meatloaf with Brown Sugar Tomato Glaze
Ingredienser
- 1 pound ground venison
- ½ pound ground pork
- ½ cup plain breadcrumbs
- 1 large egg
- ½ cup finely diced yellow onion
- 2 tablespoons milk
- 1 tablespoon Worcestershire sauce
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ cup ketchup, divided
- 2 tablespoons packed brown sugar
- 1 teaspoon apple cider vinegar
fremgangsmåte
- Preheat a smoker to 250°F and add hickory wood according to the smoker’s instructions. Line a small rimmed pan with foil or set out a suitable grill-safe pan for the meatloaf.
- In a large bowl, combine the venison, ground pork, breadcrumbs, egg, onion, milk, Worcestershire sauce, salt, pepper, garlic powder, and 2 tablespoons of the ketchup. Mix gently with your hands just until the ingredients are evenly distributed. Avoid packing the mixture tightly.
- Shape the mixture into a loaf about 8 inches long and place it in the prepared pan. Make a shallow channel along the top to help hold the glaze.
- In a small bowl, stir together the remaining ketchup, brown sugar, and apple cider vinegar. Brush about half of the glaze over the meatloaf.
- Place the pan in the smoker and cook until the center reaches 155°F, about 1½ to 2 hours depending on the loaf’s thickness and your smoker. Brush on the remaining glaze during the last 20 minutes of cooking.
- Remove the meatloaf when its center reaches 160°F. Let it rest for 10 minutes before slicing so the juices settle and the slices hold together.

Bacon-Wrapped Venison Meatloaf Stuffed with Cheddar and Caramelized Onions
This smoked meatloaf pairs lean venison with smoky bacon, sharp cheddar, and sweet, slowly cooked onions. The cheese and onions are tucked inside, so each slice has a savory, melty center.
It makes a hearty main dish for a weekend dinner or a relaxed cookout. Smoking gives the bacon a crisp edge and the meatloaf a gentle wood-fired flavor, while a little pork keeps the venison tender.

Bacon-Wrapped Venison Meatloaf Stuffed with Cheddar and Caramelized Onions
Ingredienser
- 1 tablespoon olive oil
- 1 large yellow onion, thinly sliced
- 1 pound ground venison
- 4 ounces ground pork
- 1 large egg
- ½ cup plain breadcrumbs
- 2 tablespoons milk
- 1 teaspoon Worcestershire sauce
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- 4 ounces sharp cheddar cheese, cut into short sticks
- 8 slices bacon
- 1 cup barbecue sauce, divided
fremgangsmåte
- Heat the olive oil in a skillet over medium-low heat. Add the sliced onion and cook, stirring occasionally, until soft and deep golden, about 20 to 25 minutes. Set aside to cool.
- Preheat a smoker to 250°F. In a large bowl, combine the venison, ground pork, egg, breadcrumbs, milk, Worcestershire sauce, salt, pepper, and garlic powder. Mix gently just until combined.
- Lay a large sheet of parchment on the counter. Shape half of the meat mixture into a rectangle about 9 by 6 inches. Arrange the cheddar sticks down the center, then spoon the cooled onions over the cheese, leaving the edges clear.
- Shape the remaining meat mixture over the filling. Pinch the edges and ends together to seal the cheddar and onions inside. Form the loaf into an even shape so it cooks consistently.
- Lay the bacon slices side by side on a clean sheet of parchment, slightly overlapping them. Place the meatloaf seam-side down across the bacon. Wrap the bacon around the loaf, tucking the ends underneath.
- Transfer the wrapped meatloaf to the smoker. Smoke until the center reaches 150°F, then brush the top and sides with half of the barbecue sauce. Continue smoking until the center reaches 160°F, checking with an instant-read thermometer.
- Brush the remaining barbecue sauce over the bacon during the final few minutes of cooking. Let the meatloaf rest for 10 minutes before slicing so the filling settles and the cheese is less likely to spill out.

- ⅓ cup whole milk
- 1 large egg
- ½ cup finely diced yellow onion
- 2 cloves garlic, minced

- ¼ teaspoon black pepper
- ¾ cup shredded low-moisture mozzarella, divided
- ½ cup marinara sauce, divided
- 1 tablespoon olive oil, for the grill grates

Southwestern Smoked Venison Meatloaf with Corn, Black Beans, and Chipotle Glaze
Corn, black beans, and warm Southwestern spices give lean venison a hearty, savory bite, while a smoky chipotle glaze adds a little heat and tang. Smoking the loaf keeps the flavor deep and lets the outside develop a lightly crisp finish.
This meatloaf makes a satisfying dinner for a weekend cookout or a cozy family meal. Serve it in thick slices with the beans and corn tucked throughout, so every bite has a mix of tender meat and hearty vegetables.

Southwestern Smoked Venison Meatloaf with Corn, Black Beans, and Chipotle Glaze
Ingredienser
- 1 tablespoon olive oil
- 1 small yellow onion, finely diced
- 2 garlic cloves, minced
- 1 pound ground venison
- 1 large egg
- 1/2 cup plain breadcrumbs
- 1/4 cup milk
- 1/2 cup canned black beans, rinsed and drained
- 1/2 cup corn kernels, thawed if frozen
- 1/3 cup shredded sharp cheddar cheese
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 3/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/3 cup ketchup
- 1 tablespoon adobo sauce from a can of chipotle peppers
- 1 teaspoon honey
- 1 teaspoon apple cider vinegar
fremgangsmåte
- Preheat a smoker to 250°F. If your smoker uses wood, choose a mild or fruitwood smoke so it complements the venison without overpowering the chipotle glaze.
- Warm the olive oil in a small skillet over medium heat. Add the diced onion and cook until softened, about 4 to 5 minutes. Stir in the garlic and cook for 30 seconds, then remove the skillet from the heat and let the mixture cool slightly.
- In a large bowl, combine the egg, breadcrumbs, and milk. Add the ground venison, cooled onion and garlic, black beans, corn, cheddar, cumin, chili powder, smoked paprika, salt, and black pepper. Mix gently until just combined. Avoid compressing the mixture, which can make the loaf dense.
- Shape the mixture into a compact loaf on a piece of foil or a smoker-safe tray. Leave space around the loaf so smoke can circulate.
- Stir together the ketchup, adobo sauce, honey, and apple cider vinegar in a small bowl. Brush about half of the glaze over the top and sides of the meatloaf. Set the remaining glaze aside.
- Smoke the meatloaf until the center reaches 160°F on an instant-read thermometer, usually about 2 to 2 1/2 hours depending on the smoker and loaf shape. Brush the remaining glaze over the top during the final 20 minutes.
- Remove the meatloaf from the smoker and let it rest for 10 minutes before slicing. This helps the slices hold together around the corn and beans.
