Ingredienser

  • 1 pound ground venison
  • ½ pound ground pork
  • ½ cup panko breadcrumbs
  • 1 large egg
  • ¼ cup finely chopped yellow onion
  • 2 cloves garlic, minced
  • 1 tablespoon finely grated fresh ginger
  • 2 tablespoons soy sauce, divided
  • 1 teaspoon toasted sesame oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2 tablespoons gochujang
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 2 cups uncooked short-grain rice
  • 1 medium cucumber, thinly sliced
  • 2 green onions, thinly sliced
  • 1 teaspoon toasted sesame seeds

fremgangsmåte

  • Rinse the rice under cool water until the water runs mostly clear. Cook it according to the package directions, then keep it covered while you prepare the meatloaf.
  • Heat a smoker to 250°F. In a large bowl, combine the ground venison, ground pork, panko, egg, onion, garlic, ginger, 1 tablespoon of the soy sauce, sesame oil, salt, and black pepper. Mix gently just until combined.
  • Shape the mixture into a compact loaf and place it on a smoker-safe tray or directly on a clean smoker rack. Smoke until the center reaches 160°F, checking with an instant-read thermometer.
  • While the meatloaf smokes, stir together the gochujang, honey, rice vinegar, and remaining 1 tablespoon soy sauce in a small bowl.
  • Brush the glaze over the meatloaf during the final 15 minutes of smoking. Continue cooking until the glaze is tacky and the meatloaf has reached 160°F in the center. Rest the loaf for 10 minutes before slicing.
  • Divide the rice among four bowls. Add sliced meatloaf and cucumber, then sprinkle with green onions and sesame seeds. Spoon any remaining glaze over the meatloaf before serving.

merknader

Mix the meatloaf gently so it stays tender, and use a thermometer to avoid overcooking lean venison. For milder bowls, use a little less gochujang in the glaze, or serve extra glaze on the side for anyone who wants more heat.
