These cheesy BBQ smoked meatloaf recipes bring together smoky flavor, melty cheese, and a sweet brown sugar glaze. You’ll find practical ideas for family dinners, weekend cookouts, and make-ahead meals. Choose a recipe that fits your taste, then serve it with your favorite simple sides.
Helpful Tips Before You Start
A few simple steps can help your smoked meatloaf stay moist, cheesy, and nicely glazed.
Choose the Right Ground Meat
Use ground beef with some fat, such as 80/20, to keep the loaf juicy during smoking. If you use leaner meat, take care not to overmix it.
Keep the Cheese Inside
Use low-moisture cheese and seal the meat mixture around it to limit leaks. Chilling the cheese briefly before shaping can make it easier to handle.
Shape for Even Smoking
Form the meatloaf into an even-thickness loaf so it cooks at a steady pace. Set it on a wire rack or perforated pan to let smoke circulate around the sides.
Glaze Near the End
Brush on the brown sugar BBQ glaze during the final part of smoking. Adding it too early can make the sugars darken or burn before the meatloaf is done.
Check the Center Temperature
Use an instant-read thermometer in the thickest part of the loaf, avoiding the cheese filling. Cook ground beef to 160°F, then let the meatloaf rest before slicing.
Classic Smoked Meatloaf with Cheddar Center and Brown Sugar BBQ Glaze
This smoked meatloaf has a tender, savory center with a ribbon of melted cheddar tucked inside. A glaze of barbecue sauce and brown sugar coats the outside, adding a sweet, smoky finish.
It makes a comforting main dish for a weekend dinner or casual cookout. Serve slices warm so the cheddar center stays soft and the glaze clings to each piece.

Classic Smoked Meatloaf with Cheddar Center and Brown Sugar BBQ Glaze
Ingredienser
- 1 pound ground beef
- 1 large egg
- 1/2 cup plain breadcrumbs
- 1/4 cup milk
- 1/4 cup finely diced yellow onion
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 4 ounces sharp cheddar cheese, cut into a thick stick
- 1/3 cup barbecue sauce
- 2 tablespoons packed brown sugar
fremgangsmåte
- Preheat a smoker to 250°F. In a small bowl, stir together the barbecue sauce and brown sugar until the sugar is mostly dissolved. Set the glaze aside.
- In a large bowl, whisk the egg with the milk. Add the breadcrumbs, diced onion, garlic powder, smoked paprika, salt, and black pepper. Stir to combine, then add the ground beef and mix gently until evenly combined.

Bacon-Wrapped BBQ Meatloaf with Smoked Gouda and Brown Sugar Glaze
Smoked Gouda melts into the center of this bacon-wrapped meatloaf, while barbecue sauce and brown sugar make a sticky, smoky glaze. The bacon helps keep the loaf moist and adds a crisp, savory edge.
Serve it for a cozy weekend dinner or a casual cookout. It slices best after resting, so the cheese stays tucked inside and each piece holds its shape.

Bacon-Wrapped BBQ Meatloaf with Smoked Gouda and Brown Sugar Glaze
Ingredienser
- 1 pound ground beef
- 1 large egg
- 1/2 cup plain breadcrumbs
- 1/4 cup finely diced yellow onion
- 1/4 cup barbecue sauce, divided
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 4 ounces smoked Gouda, cut into a thick stick
- 6 slices bacon
- 2 tablespoons packed brown sugar
fremgangsmåte
- Heat the oven to 375°F. Line a rimmed baking sheet with foil and set a wire rack on top.
- In a large bowl, combine the ground beef, egg, breadcrumbs, onion, 2 tablespoons of the barbecue sauce, smoked paprika, garlic powder, salt, and black pepper. Mix gently until just combined.
- Transfer the meat mixture to the prepared rack and shape it into a rectangle about 8 inches long. Place the smoked Gouda down the center. Fold the meat around the cheese and pinch the edges closed to seal it inside.
- Lay the bacon slices across the loaf, slightly overlapping them. Tuck the ends underneath so the bacon stays in place as it cooks.
- Stir the remaining 2 tablespoons of barbecue sauce with the brown sugar. Brush half of the glaze over the bacon-wrapped loaf.
- Bake until the center reaches 160°F, about 55 to 65 minutes. Brush with the remaining glaze during the final 15 minutes. If the bacon needs more browning, broil briefly at the end, watching closely.
- Let the meatloaf rest for 10 minutes before slicing. This gives the melted Gouda time to settle and helps the slices hold together.
