Traeger meatloaf is an easy way to add smoky flavor to a family favorite, and these recipes make dinner simple to plan. You’ll find a range of tasty variations, along with smoking times to help you know when each loaf is ready. Whether you’re cooking for a weeknight meal or a relaxed weekend dinner, there’s an option here to try.
Helpful Tips Before You Start
A few simple steps can help your Traeger meatloaf cook evenly and turn out juicy.
Use a Meat Thermometer
Check the center of the loaf with an instant-read thermometer instead of relying on time alone. Ground beef should reach 160°F, while ground poultry should reach 165°F.
Shape the Loaf for Even Cooking
Form the meatloaf into an even thickness so it cooks at a steady pace. A free-form loaf on a rack lets smoke circulate around the sides.
Preheat the Traeger
Allow the grill to reach the recipe’s cooking temperature before adding the meatloaf. Starting with a preheated grill makes the smoking time more predictable.
Rest Before Slicing
Let the meatloaf rest for about 10 minutes after cooking. This helps the juices settle and makes cleaner slices.
Add Glaze Near the End
Brush on sugary sauces during the last 20 to 30 minutes of cooking. Adding them too early can cause the glaze to darken or burn.
Classic Hickory-Smoked Beef Meatloaf with Brown Sugar Glaze
This beef meatloaf gets its classic smoky flavor from a Traeger set to hickory, while a simple brown sugar glaze adds a sweet, tangy finish. Breadcrumbs and milk help keep each slice tender without making the loaf heavy.
It’s a cozy main dish for a family dinner or a weekend cookout. Let the meatloaf rest before slicing so it holds together and the glaze stays in place.

Classic Hickory-Smoked Beef Meatloaf with Brown Sugar Glaze
Ingredienser
- 1 pound ground beef
- ½ cup plain breadcrumbs
- ¼ cup milk
- 1 large egg
- ¼ cup finely diced yellow onion
- 1 tablespoon Worcestershire sauce
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ¼ cup ketchup, divided
- 2 tablespoons packed brown sugar
- 1 teaspoon apple cider vinegar
fremgangsmåte
- Set the Traeger to 225°F and preheat with hickory pellets. Line a rimmed baking sheet with foil.
- In a large bowl, stir together the breadcrumbs and milk. Let them sit for 2 minutes so the breadcrumbs can absorb the milk.
- Add the egg, diced onion, Worcestershire sauce, salt, pepper, and 2 tablespoons of the ketchup. Mix until combined. Add the ground beef and gently mix just until everything is evenly distributed.
- Shape the mixture into a compact loaf on the prepared baking sheet. Avoid packing it too tightly, which can make the meatloaf dense.
- Place the baking sheet on the Traeger and smoke until the center reaches 150°F, about 1½ to 2 hours. Check the temperature with an instant-read thermometer.
- While the meatloaf smokes, stir together the remaining 2 tablespoons ketchup, brown sugar, and apple cider vinegar in a small bowl.
- Brush the glaze over the meatloaf. Continue cooking until the center reaches 160°F, about 15 to 25 minutes more.
- Remove the meatloaf from the grill and let it rest for 10 minutes before slicing.

BBQ Cheddar-Stuffed Meatloaf with Crispy Onion Topping
This Traeger meatloaf has a smoky, savory center with a pocket of melted cheddar and a tangy barbecue glaze. Crispy fried onions add crunch on top, giving each slice a mix of tender, cheesy, and crisp textures.
It works well for a relaxed family dinner or a backyard cookout, and the stuffed center makes it feel a little special without adding much fuss. Let the loaf rest before slicing so the cheese stays tucked inside.

BBQ Cheddar-Stuffed Meatloaf with Crispy Onion Topping
Ingredienser
- 1 pound ground beef
- 1 large egg
- 1/3 cup plain breadcrumbs
- 1/4 cup milk
- 1/4 cup finely diced yellow onion
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 3/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 3/4 cup shredded sharp cheddar cheese
- 1/3 cup barbecue sauce, divided
- 1/2 cup crispy fried onions
fremgangsmåte
- Set the Traeger to 225°F and preheat with the lid closed. Line a rimmed baking sheet or grill-safe tray with foil.
- In a large bowl, combine the egg, breadcrumbs, milk, diced onion, garlic powder, smoked paprika, salt, and black pepper. Add the ground beef and mix gently until just combined.
- Place about half of the meat mixture on the prepared tray and shape it into a low rectangle. Leave a border around the edges. Arrange the cheddar down the center, then cover it with the remaining meat mixture. Pinch the edges and ends closed so the cheese is sealed inside.
- Brush the top and sides with half of the barbecue sauce. Place the tray on the Traeger and smoke until the center reaches 150°F, about 1½ to 2 hours. Check the temperature in the meat, avoiding the cheese-filled center if possible.
- Brush the remaining barbecue sauce over the loaf. Sprinkle the crispy fried onions over the top and continue cooking until the center reaches 160°F, about 15 to 25 minutes more.
- Carefully remove the tray from the grill and let the meatloaf rest for 10 minutes before slicing. This helps the loaf hold its shape and keeps the melted cheddar inside.

Smoked meatloaf wrapped in bacon has a savory, smoky crust and a tender center. Roasted garlic mashed potatoes make it a cozy, complete meal that works well for a relaxed weekend dinner or a family gathering.
The potatoes roast alongside the meatloaf, so the garlic turns soft and mellow as the meat cooks on the Traeger. A simple ketchup glaze adds a little sweetness to balance the smoky bacon.

Bacon-Wrapped Meatloaf with Roasted Garlic Mashed Potatoes
Ingredienser
- 1 whole head garlic
- 1 teaspoon olive oil
- 1 pound ground beef
- 1 egg
- 1/2 cup plain breadcrumbs
- 1/4 cup whole milk
- 1/4 cup finely diced yellow onion
- 1 tablespoon Worcestershire sauce

- 1/2 teaspoon black pepper
- 8 slices thin-cut bacon
- 1/4 cup ketchup

- 1/4 cup unsalted butter
- 1/3 cup warm milk, plus more as needed
- 1/2 teaspoon kosher salt, for the potatoes
fremgangsmåte
- Preheat the Traeger to 375°F. Cut the top off the garlic head to expose the cloves, drizzle with olive oil, and wrap it in foil. Roast the garlic on the grill until soft, about 35 to 45 minutes. Let it cool, then squeeze the cloves from their skins and mash them.
- While the garlic roasts, combine the ground beef, egg, breadcrumbs, whole milk, onion, Worcestershire sauce, kosher salt, and black pepper in a bowl. Mix gently just until combined.
- Shape the mixture into a compact loaf on a rimmed baking sheet or in a grill-safe pan. Lay the bacon slices across the top, tucking the ends under the loaf. Brush the bacon with half of the ketchup.
- Put the meatloaf on the Traeger and smoke at 225°F until the center reaches 150°F, about 1 1/2 to 2 hours. Raise the grill temperature to 375°F, brush on the remaining ketchup, and cook until the center reaches 160°F and the bacon is browned, about 20 to 30 minutes more. Rest the meatloaf for 10 minutes before slicing.
- While the meatloaf cooks, place the potatoes in a pot and cover with cold water. Bring to a boil, then simmer until the potatoes are very tender, about 15 to 20 minutes. Drain well.
- Mash the potatoes with the butter, warm milk, roasted garlic, and 1/2 teaspoon kosher salt. Add a little more warm milk if needed for a softer texture. Serve the mashed potatoes with slices of bacon-wrapped meatloaf.
