Preheat the oven to 375 degrees and lightly grease a loaf pan.
In a large bowl, combine the ground beef, cracker crumbs, egg, milk, onion, jalapeños, cilantro, half the pepper jack cheese, chili powder, cumin, salt, and black pepper. Mix with your hands until the ingredients are evenly distributed.
Transfer the mixture to the prepared loaf pan and press it into an even shape.
Bake for 45 minutes. Remove the pan from the oven and sprinkle the remaining pepper jack cheese over the top.
Return the pan to the oven and bake for another 10 to 15 minutes until the cheese melts and the internal temperature reaches 160 degrees.
Let the meatloaf rest for 10 minutes before slicing and serving.

Use room-temperature milk when mixing so the cracker crumbs absorb it evenly and keep the texture moist. If you want less heat, reduce the jalapeños to one or swap in milder green chiles. Leftovers reheat well in a skillet over medium heat with a splash of water to prevent drying out.Course: Main Course
