Heat the oven to 375°F. Lightly grease a 12-cup muffin tin.
In a large mixing bowl, combine the ground turkey, corn, breadcrumbs, egg, 2 tablespoons of the barbecue sauce, chopped chipotle, adobo sauce, onion, smoked paprika, garlic powder, salt, and black pepper. Mix gently just until combined.
Divide the mixture evenly among 8 muffin cups. Press it in lightly, leaving the tops rounded rather than packing the mixture tightly.
Spoon the remaining barbecue sauce over the muffins, spreading a little across each top.
Bake until the muffins are cooked through and the centers reach 165°F, about 25 to 30 minutes. Let them rest in the tin for 5 minutes before removing and serving.

For a milder smoky flavor, use half the chopped chipotle and adobo sauce. If using frozen corn, thaw it and pat it dry first so the mixture does not become watery. Refrigerate leftovers in a covered container and reheat until hot.Course: Main Course
