Preheat the oven to 375 degrees Fahrenheit and line a loaf pan with parchment paper.
In a large bowl, combine the ground beef, crushed pork rinds, egg, 1/4 cup barbecue sauce, smoked paprika, onion, garlic, salt, and black pepper. Mix with clean hands until evenly blended.
Press the mixture firmly into the prepared loaf pan and smooth the top.
Bake for 35 minutes, then remove from the oven and brush the top with the remaining 2 tablespoons of barbecue sauce.
Return to the oven and bake for 10 more minutes until the internal temperature reaches 160 degrees Fahrenheit.
Let the meatloaf rest in the pan for 10 minutes, then sprinkle with chopped parsley before slicing.
