Heat the oven to 375°F. Lightly grease 8 cups of a standard muffin pan.
In a large bowl, combine the ground turkey, cooked brown rice, chopped pineapple, egg, breadcrumbs, diced onion, 1/4 cup of the BBQ sauce, garlic powder, salt, and black pepper. Mix gently until just combined.
Divide the mixture evenly among the 8 prepared muffin cups. Shape each portion into a rounded top without packing the mixture tightly.
Bake for 20 minutes. Remove the pan from the oven and brush the tops with the remaining 1/4 cup BBQ sauce.
Return the pan to the oven and bake for 8 to 12 minutes, until the centers reach 165°F. Let the muffins rest in the pan for 5 minutes before removing and serving.

Drain the pineapple well so the mixture holds together, and use cooled rice to keep the turkey mixture easy to portion. For a stronger sweet-and-tangy finish, reserve a little of the measured BBQ sauce to serve at the table.Course: Main Course
