In a large bowl, combine the ground beef, breadcrumbs, egg, parsley, oregano, basil, garlic, Parmesan, salt, and pepper. Mix with your hands until the ingredients are evenly distributed.
Shape the mixture into a loaf that will fit inside your slow cooker. Place it in the center of the slow cooker.
Cover and cook on low until the loaf is firm and cooked through.
Spread the marinara sauce evenly over the top of the meatloaf. Sprinkle the shredded mozzarella on top of the sauce.
Cover again and continue cooking until the cheese is melted and the sauce is warmed.
