Preheat the oven to 375 degrees and lightly grease a loaf pan.
In a mixing bowl combine the ground beef, breadcrumbs, egg, onion, 1 tablespoon soy sauce, 1 tablespoon brown sugar, 2 teaspoons ginger, garlic, and black pepper.
Mix with your hands until the ingredients are evenly distributed but do not overwork the meat.
Press the mixture into the prepared loaf pan and smooth the top.
Bake for 35 minutes.
While the meatloaf bakes, stir together the remaining 1 tablespoon soy sauce, 2 tablespoons brown sugar, and 1 teaspoon ginger to make the glaze.
Remove the pan from the oven, spread the glaze over the top, and return it to the oven for 10 more minutes.
Let the meatloaf rest for 5 minutes before slicing.
