Preheat the oven to 375°F and line a baking sheet with parchment paper.
In a large bowl, combine the ground beef, panko breadcrumbs, egg, onion, garlic, 2 tablespoons cherry preserves, chipotle in adobo, salt, and black pepper. Mix with your hands until just combined.
Shape the mixture into a loaf about 8 inches long and place it on the prepared baking sheet.
In a small bowl, stir together the remaining 1 tablespoon cherry preserves, brown sugar, and ketchup until smooth.
Spread the glaze evenly over the top and sides of the meatloaf.
Bake for 45 to 50 minutes until the internal temperature reaches 160°F. Let the meatloaf rest for 5 minutes before slicing.
