Preheat the oven to 375 degrees and line a baking sheet with parchment paper.
In a large bowl, combine the ground beef, crushed pork rinds, eggs, grated Parmesan, parsley, garlic, onion, oregano, salt, and pepper. Mix until evenly blended.
Shape the mixture into a loaf about 8 inches long and place it on the prepared baking sheet.
Lay the bacon slices over the top and sides of the loaf, tucking the ends underneath so they stay in place.
Bake for 50 to 60 minutes until the internal temperature reaches 160 degrees and the bacon is browned.
Remove from the oven and let the loaf rest for 10 minutes before slicing.
