  • 1/2 cup certified gluten-free rolled oats
  • 1 medium carrot, peeled and finely grated
  • 1 large egg
  • 1/4 cup finely diced yellow onion
  • 2 tablespoons milk
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/3 cup ketchup, divided
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon brown sugar

fremgangsmåte

  • Heat the oven to 375°F. Lightly grease a 12-cup muffin pan.
  • In a large bowl, combine the ground turkey, oats, grated carrot, egg, onion, milk, Worcestershire sauce, garlic powder, salt, pepper, and 2 tablespoons of the ketchup. Mix gently until just combined.
  • Divide the mixture among 8 muffin cups, filling each about three-quarters full. Press lightly to shape the tops, but avoid packing the mixture tightly.
  • In a small bowl, stir together the remaining ketchup, apple cider vinegar, and brown sugar. Spoon the mixture over the meatloaf muffins.
  • Bake until the muffins are cooked through and the centers reach 165°F, about 25 to 30 minutes. Let them rest in the pan for 5 minutes before removing.

merknader

For a softer oat texture, let the oat and milk mixture stand for 5 minutes before mixing it with the other ingredients. If your grated carrot is especially wet, gently squeeze out excess moisture so the muffins hold their shape. Store leftovers in the refrigerator and reheat them gently to keep the turkey moist.
