Turkey and Oat Meatloaf with Tomato-Brown Sugar Sauce and Sweet Potato Wedges

  • 1 pound ground turkey
  • 1/2 cup rolled oats
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 3/4 teaspoon salt, divided
  • 1/2 teaspoon black pepper
  • 1/4 cup milk
  • 1/2 cup ketchup
  • 3 tablespoons brown sugar
  • 2 large sweet potatoes, cut into wedges
  • 2 tablespoons olive oil
  • 1/2 teaspoon paprika

  • Preheat the oven to 375 degrees. Line a baking sheet with parchment paper.
  • In a large bowl, combine the ground turkey, rolled oats, egg, onion, garlic, 1/2 teaspoon salt, black pepper, and milk. Mix until evenly blended but do not overwork the meat.
  • Shape the mixture into a loaf and place it on one side of the prepared baking sheet.
  • In a small bowl, stir together the ketchup and brown sugar to make the sauce. Spread half of the sauce over the top of the meatloaf.
  • In another bowl, toss the sweet potato wedges with olive oil, the remaining 1/4 teaspoon salt, and paprika until coated. Spread the wedges on the other side of the baking sheet.
  • Bake for 35 minutes. Remove the pan from the oven and spread the remaining sauce over the meatloaf. Return to the oven and bake 10 more minutes until the meatloaf reaches 165 degrees and the wedges are tender.

Use quick oats if you want a finer texture in the meatloaf. The sweet potatoes absorb some of the pan juices during roasting, so give them a quick toss halfway through if they look dry. Leftovers reheat well in a 350-degree oven for 10 minutes to keep the crust on the wedges crisp.
