While the meatloaf bakes, whisk together the peanut butter, soy sauce, lime juice, and water in a small bowl until smooth. Add a little more water if needed to reach a pourable consistency.
Let the meatloaf rest for 5 minutes after baking, then slice and serve with the peanut sauce drizzled over or on the side.
