Heat the oven to 375°F and line a baking sheet with parchment paper.
In a mixing bowl combine the ground beef, breadcrumbs, egg, and ½ cup of the crushed pineapple. Mix just until the ingredients hold together.
Divide the mixture into four equal portions and shape each into a small loaf. Place the loaves on the prepared baking sheet.
In a small bowl stir together the remaining ½ cup pineapple, ketchup, brown sugar, rice vinegar, and soy sauce until the sugar dissolves.
Spoon half the sauce over the tops of the meatloaves. Bake for 25 minutes, then add the rest of the sauce and bake 10 minutes more until the internal temperature reaches 160°F.
Spoon the cooked jasmine rice onto plates and set one meatloaf on each portion. Drizzle any sauce left on the baking sheet over the rice.
