2 stalks lemongrass, bruised and cut into 2-inch pieces
3 Thai red chilies, thinly sliced
1 tablespoon fresh ginger, thinly sliced
4 cloves garlic, minced
8 ounces mushrooms, sliced
2 tablespoons fish sauce
Juice of 2 limes
1/4 cup fresh cilantro, chopped
2 green onions, sliced

Combine the chicken broth, lemongrass, ginger, garlic, and chilies in a large pot. Bring the mixture to a simmer over medium heat and cook for 10 minutes to infuse the broth.
Add the sliced mushrooms and continue simmering for 5 minutes until they soften.
Stir in the shrimp and cook for 3 to 4 minutes until they turn pink and opaque.
Remove the pot from the heat. Stir in the fish sauce and lime juice.
Ladle the soup into bowls and top each serving with cilantro and green onions.
