Spicy Chipotle Bacon-Wrapped Turkey Meatloaf with Black Bean Salad

  • 1 pound ground turkey
  • 8 slices bacon
  • 2 chipotle peppers in adobo sauce, minced
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 red bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 tablespoon olive oil

  • Preheat the oven to 375 degrees F and line a baking sheet with parchment paper. In a large bowl, combine the ground turkey, minced chipotle peppers, breadcrumbs, egg, diced onion, minced garlic, cumin, salt, and black pepper. Mix until evenly blended. Shape the mixture into a loaf about 8 inches long. Lay the bacon slices across the top and sides of the loaf, tucking the ends underneath. Place the wrapped loaf on the prepared baking sheet. Bake for 45 to 50 minutes until the internal temperature reaches 165 degrees F and the bacon is crisp. While the meatloaf bakes, make the salad. In a medium bowl, stir together the black beans, corn, diced red bell pepper, cilantro, lime juice, and olive oil. Season with a pinch of salt if needed. Let the meatloaf rest for 5 minutes after baking, then slice and serve with the black bean salad on the side.

For extra crisp bacon, broil the meatloaf for the final 2 minutes while watching closely. If the chipotle heat feels too strong, reduce to one pepper next time. Leftovers keep in the fridge for three days and reheat well in a 350 degree F oven to keep the bacon from turning soggy.
