1 pound boneless skinless chicken breast, cut into bite-size pieces
2 tablespoons smoked paprika
6 cups low-sodium chicken broth
2 (15-ounce) cans garbanzo beans, drained and rinsed
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped fresh parsley
Lemon wedges, for serving
fremgangsmåte
Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook for 3 to 4 minutes until the onion softens.
Add the chicken pieces and smoked paprika. Stir and cook for 5 minutes until the chicken starts to brown on the outside.
Pour in the chicken broth and add the garbanzo beans, salt, and black pepper. Bring the mixture to a boil.
Reduce the heat to low, cover the pot, and simmer for 15 minutes until the chicken is cooked through and the flavors have blended.
Remove the pot from the heat. Stir in the chopped parsley. Serve with lemon wedges on the side.
merknader
Simmering the garbanzo beans in the broth helps them absorb the smoky flavor. If the soup thickens after refrigeration, add a splash of broth when reheating. The lemon wedges brighten the paprika without overpowering it.Course: Soup
