Preheat the oven to 375°F. In a large mixing bowl, combine the ground beef, panko breadcrumbs, egg, cooled coffee, 2 tablespoons of the molasses, onion, garlic, smoked paprika, salt, and black pepper. Mix with your hands until the ingredients are just evenly distributed.
Shape the mixture into a firm loaf and place it on a baking sheet lined with parchment paper.
Bake for 40 minutes.
While the meatloaf bakes, stir together the remaining 1 tablespoon molasses, espresso powder, apple cider vinegar, and ketchup in a small bowl to make the glaze.
Remove the meatloaf from the oven and brush the glaze evenly over the top and sides. Return it to the oven and bake for 15 more minutes until the glaze has thickened and the internal temperature reaches 160°F.
Let the meatloaf rest for 5 minutes before slicing.
