In a large bowl, combine the ground beef, crumbled bacon, minced chipotle peppers, egg, almond flour, smoked paprika, garlic powder, salt, and black pepper. Mix gently with your hands until just combined.
Divide the mixture into 8 equal portions and shape each into a small loaf. Place the loaves on the prepared baking sheet.
Bake for 25 to 28 minutes until the internal temperature reaches 160 degrees.
While the meatloaves bake, toss the bell pepper strips with olive oil in a bowl. Heat a grill pan or skillet over medium high heat and cook the peppers for 6 to 8 minutes, turning occasionally, until they soften and show grill marks.
Remove the meatloaves from the oven and let them rest for 5 minutes before serving with the grilled peppers.
