Preheat the oven to 375 degrees and line a loaf pan with parchment paper.
In a large bowl, combine the ground beef, breadcrumbs, egg, half of the BBQ sauce, smoked paprika, onion, garlic, salt, and pepper. Mix until evenly blended but do not overwork the meat.
Press half the mixture into the bottom of the prepared pan. Arrange the Gouda cubes in a single row down the center.
Cover the cheese with the remaining meat mixture and press gently to seal the edges so the cheese stays enclosed.
Spread the rest of the BBQ sauce over the top of the loaf.
Bake for 45 to 50 minutes until the internal temperature reaches 160 degrees. Let the meatloaf rest for 10 minutes before slicing.
