Preheat the oven to 375°F. In a large mixing bowl, combine the ground turkey, breadcrumbs, egg, onion, garlic, 1 tablespoon of the Dijon mustard, smoked paprika, thyme, salt, pepper, and milk.
Mix the ingredients with your hands or a spoon until they are evenly combined but not overworked.
Shape the mixture into a loaf on a parchment-lined baking sheet or press it into a loaf pan.
Spread the remaining 1 tablespoon of Dijon mustard evenly over the top of the loaf.
Bake for 45 to 50 minutes, or until the internal temperature reaches 165°F.
Remove from the oven and let the meatloaf rest for 5 minutes. Sprinkle with the chopped parsley before slicing.
