Add the rinsed red lentils, diced onion, minced garlic, grated ginger, cumin, turmeric, garam masala, chili powder, vegetable broth, diced tomatoes, and salt to the slow cooker. Stir to combine all the ingredients evenly.
Cover and cook on low for 6 hours or on high for 3 hours, until the lentils are soft and have broken down into a thick soup consistency.
Stir in the chopped spinach during the last 10 minutes of cooking so it wilts without losing its bright color.
Taste and adjust salt if needed. Serve the dal hot with chopped cilantro and lemon wedges on the side.

Stir the spinach in right at the end to keep its texture fresh rather than mushy. If the dal thickens too much after cooking, add a splash of warm broth to loosen it before serving. Leftovers reheat well on the stovetop with a little extra liquid.Course: Soup
