Heat the sesame oil in a large pot over medium heat. Add the garlic and ginger and cook for one minute until fragrant.
Add the sliced shiitake mushrooms and cook for 4 to 5 minutes until they soften and release liquid.
Pour in the vegetable broth and bring to a simmer. Stir in the rinsed quinoa.
Simmer for 15 minutes until the quinoa is tender.
Remove the pot from the heat. Ladle out about a cup of broth into a small bowl, whisk in the miso paste until smooth, then stir the mixture back into the pot.
Divide the soup among four bowls and top each with the sliced scallions.

Stir the miso in after the soup is off the heat to keep its flavor bright. If the broth thickens too much the next day, add a splash of water when reheating. Leftovers keep well in the fridge for three days.Course: Soup
