Preheat the oven to 375°F and line a baking sheet with parchment paper.
In a large bowl, combine the ground chicken, onion, garlic, cumin, coriander, cinnamon, paprika, oats, egg, salt, and pepper. Mix gently with your hands until just combined.
Divide the mixture into 8 equal portions and shape each into a small loaf. Place the loaves on the prepared baking sheet.
Bake for 22 to 25 minutes until the internal temperature reaches 165°F.
While the meatloaves bake, bring the chicken broth to a boil in a small saucepan. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes.
Fluff the couscous with a fork, then stir in the chopped apricots, sliced almonds, olive oil, lemon juice, and parsley.
Serve the mini meatloaves with the apricot couscous on the side.
