Moroccan Spiced Beef Mini Meatloafs with Roasted Carrots and Dates

  • 1 pound ground beef
  • 4 medium carrots, peeled and cut into 1-inch pieces
  • 8 Medjool dates, pitted and roughly chopped
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon paprika
  • 1 large egg
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

  • Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
  • In a large bowl, combine the ground beef, onion, garlic, cumin, coriander, cinnamon, paprika, egg, salt, and pepper. Mix until the spices are evenly distributed.
  • Divide the mixture into eight equal portions and shape each into a small oval loaf. Place the loaves on one half of the prepared baking sheet.
  • In a separate bowl, toss the carrot pieces with the olive oil and a pinch of salt. Spread them on the other half of the baking sheet.
  • Bake for 20 minutes. Remove the sheet, sprinkle the chopped dates over the carrots, and return to the oven for another 10 minutes until the meatloafs are cooked through and the carrots are tender.
  • Sprinkle the finished dish with chopped parsley before serving.

If the dates start to stick to the carrots during roasting, give the vegetables a quick stir halfway through the final bake. For a make-ahead option, form the meatloafs the night before and store them covered in the refrigerator until you are ready to bake. Leftovers reheat well in a covered skillet over low heat with a splash of water to keep the meat moist.
