Heat the sesame oil in a large pot over medium heat. Add the garlic and ginger and cook for one minute until fragrant.
Add the sliced shiitake mushrooms and cook for three to four minutes until they soften and release some liquid.
Pour in the vegetable broth and bring the mixture to a gentle simmer.
Add the cubed tofu and let it warm through for two minutes.
Place the miso paste in a small bowl and ladle in about half a cup of the hot broth. Stir until the miso dissolves completely, then pour the mixture back into the pot.
Stir gently and remove the pot from the heat. Sprinkle the sliced green onions over the soup just before serving.
