8 ounces shiitake mushrooms, stems removed and sliced
3 tablespoons white miso paste
4 baby bok choy, trimmed and halved lengthwise
2 green onions, thinly sliced
1 teaspoon toasted sesame seeds
fremgangsmåte
Heat the sesame oil in a large pot over medium heat. Add the onion, garlic, and ginger. Cook for 3 minutes until the onion softens.
Pour in the vegetable broth and add the sliced shiitake mushrooms. Bring the mixture to a gentle simmer and cook for 8 minutes.
Place the miso paste in a small bowl. Ladle about half a cup of the hot broth into the bowl and stir until the miso dissolves. Return this mixture to the pot and stir well.
Add the halved bok choy to the pot. Simmer for 3 minutes until the greens turn bright green and soften slightly.
Remove the pot from the heat. Ladle the soup into bowls and top each serving with sliced green onions and toasted sesame seeds.
merknader
Stir the miso off the heat to keep its flavor bright. Baby bok choy works best here because it cooks fast and stays tender. Leftovers keep in the fridge for two days. Reheat gently on the stove without boiling to avoid changing the miso taste.Course: Soup
