Ingredienser

  • 1 pound ground turkey
  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • 1/2 cup canned black beans, rinsed, drained, and patted dry
  • 1/2 cup finely diced red bell pepper
  • 1/4 cup finely diced yellow onion
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 cup corn kernels, thawed if frozen
  • 1/4 cup finely diced red onion
  • 1 small jalapeño, seeded and finely chopped
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice

fremgangsmåte

  • Heat the oven to 375°F. Line a small rimmed baking sheet with parchment paper.
  • In a large bowl, whisk the egg with the tomato paste, cumin, chili powder, garlic powder, salt, and black pepper.
  • Add the ground turkey, breadcrumbs, black beans, bell pepper, and yellow onion. Mix gently until combined, taking care not to mash the beans or overwork the turkey.
  • Shape the mixture into a compact loaf on the prepared baking sheet. Bake until the center reaches 165°F on an instant-read thermometer, about 40 to 50 minutes.
  • While the meatloaf bakes, combine the corn, red onion, jalapeño, cilantro, and lime juice in a bowl. Stir gently and let the salsa stand so the flavors can mingle.
  • Rest the meatloaf for 5 minutes before slicing. Serve with the corn salsa on top or alongside each portion.

merknader

Pat the black beans dry before mixing them in to help keep the loaf from becoming too wet. If you prefer milder salsa, use less jalapeño or leave it out. Store leftover meatloaf and salsa separately so the slices stay firm and the salsa remains fresh.
