Divide the mixture into four equal portions. Shape each portion into a small loaf and place them on a parchment-lined baking sheet.
Bake the meatloaves for 25 to 30 minutes, or until the internal temperature reaches 160°F. Remove from the oven and let them rest for 5 minutes.
While the meatloaves bake, prepare the corn salsa. In a medium bowl, stir together the corn kernels, diced tomatoes, red onion, cilantro, lime juice, and olive oil until evenly mixed.
Spoon the corn salsa over each rested meatloaf before serving.
