Preheat the smoker to 250°F. Add mesquite wood chips according to the smoker’s instructions.
In a large bowl, combine the ground beef, egg, breadcrumbs, yellow onion, chipotle peppers, smoked paprika, salt, black pepper, and ¼ cup of the ketchup. Mix gently until combined.
Divide the mixture into four equal portions. Shape each into a small loaf, about 1 inch thick, and place them on a smoker-safe tray or rack.
Stir the brown sugar into the remaining ¼ cup ketchup. Brush the mixture over the tops of the meatloaves.
Smoke the meatloaves until the centers reach 160°F, about 1½ to 2 hours depending on their thickness and the smoker. Let them rest for 5 minutes before serving.
While the meatloaves smoke, make the salad. In a bowl, combine the black beans, corn, red bell pepper, and cilantro. Add the lime juice and olive oil, then toss gently.
Serve each meatloaf with a portion of black bean corn salad.
