Divide the mixture into eight portions and shape each into a small loaf. Place the loaves on a baking sheet and bake for 20 to 25 minutes until they reach an internal temperature of 165 degrees.
While the meatloafs bake, combine the farro and chicken broth in a medium saucepan. Bring to a boil, then reduce to a simmer and cook for 15 to 20 minutes until the farro is tender and the liquid is absorbed.
Heat the olive oil in a skillet over medium heat. Add the shallot and remaining clove of minced garlic. Cook for one minute, then add the asparagus pieces. Stir and cook for 4 to 5 minutes until the asparagus is bright green and crisp-tender.
Fluff the cooked farro with a fork and stir it into the asparagus mixture. Serve the farro pilaf alongside the baked mini meatloafs.
