Preheat the oven to 375 degrees and line a baking sheet with parchment paper.
In a large bowl, combine the ground beef, 1/4 cup gochujang, soy sauce, minced garlic, grated ginger, panko breadcrumbs, egg, chopped green onions, and sesame oil.
Mix the ingredients with your hands until evenly combined, then divide the mixture into four equal portions.
Shape each portion into a small loaf and place them on the prepared baking sheet.
Bake for 20 minutes.
While the meatloaves bake, stir together the remaining 2 tablespoons gochujang and the honey in a small bowl.
Remove the meatloaves from the oven, brush the glaze over each one, and return them to the oven for 10 more minutes.
Sprinkle the sesame seeds and sliced green onions over the meatloaves before serving.
