Preheat the oven to 375°F. In a mixing bowl combine the ground turkey, jerk seasoning, breadcrumbs, egg, and a pinch of salt. Mix until evenly blended then divide the mixture into four equal portions and shape each into a small loaf.
Place the loaves on a baking sheet and bake for 25 minutes until the internal temperature reaches 165°F. While the meatloaves bake heat the vegetable oil in a skillet over medium heat. Add the plantain slices in a single layer and cook for 3 to 4 minutes per side until golden and crisp. Remove and drain on paper towels.
In a separate bowl stir together the diced mango, red onion, cilantro, and lime juice to make the salsa. Season with a little salt if needed. Serve each meatloaf topped with a spoonful of salsa alongside the fried plantains.
