Mix the ground beef, Italian breadcrumbs, egg, Italian seasoning, salt, pepper, and 1/2 cup mozzarella in a bowl. Shape into a loaf and place on a baking sheet. Bake at 375°F for 40 minutes.
While the meatloaf bakes, dredge eggplant slices in flour, dip in beaten eggs, then coat with plain breadcrumbs. Heat olive oil in a skillet over medium heat and fry the eggplant until golden and crisp on both sides. Drain on paper towels.
Cook the linguine in salted water according to package directions and drain. Warm the marinara sauce in a small saucepan.
Remove the meatloaf from the oven and top with the remaining mozzarella and the Parmesan. Return to the oven for 5 minutes until the cheese melts. Slice the meatloaf and serve over linguine with marinara sauce and crispy eggplant on top.
