Ingredienser

  • 1½ pounds ground beef
  • ½ cup plain breadcrumbs
  • 1 large egg
  • ¼ cup milk
  • ½ small yellow onion, finely diced
  • 2 garlic cloves, minced, divided
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ cup ketchup, divided
  • 1 tablespoon brown sugar
  • 2 pounds russet potatoes, peeled and cut into chunks
  • 4 tablespoons unsalted butter
  • ½ cup warm milk, for the mashed potatoes
  • ½ teaspoon salt, for the mashed potatoes
  • Hickory wood chips or chunks, for the smoker

fremgangsmåte

  • Preheat the smoker to 275°F. Add the hickory wood chips or chunks according to the smoker’s directions.
  • In a large bowl, combine the ground beef, breadcrumbs, egg, ¼ cup milk, diced onion, half of the minced garlic, Worcestershire sauce, kosher salt, black pepper, and ¼ cup of the ketchup. Mix gently until combined.
  • Divide the mixture into four equal portions and shape each into a small loaf. Set them on a rack or smoker-safe tray with space between each loaf.
  • Stir the remaining ¼ cup ketchup with the brown sugar. Brush a thin layer over the tops of the meatloaves. Smoke until the centers reach 160°F, checking with an instant-read thermometer. Brush with the remaining glaze during the last 15 minutes of cooking.
  • While the meatloaves smoke, place the potatoes in a large pot and cover with cold water. Bring to a boil, then cook until the potatoes are fork-tender, about 15 to 20 minutes. Drain well.
  • Return the potatoes to the pot. Add the butter, warm milk, remaining minced garlic, and ½ teaspoon salt. Mash until smooth and creamy, adding a little more warm milk if needed.
  • Let the meatloaves rest for a few minutes, then serve them with the garlic mashed potatoes.

merknader

Shape the meatloaves to a similar thickness so they finish smoking at about the same time, and use a thermometer rather than relying on color to check doneness. For a stronger hickory note, keep the smoker’s smoke steady but avoid adding more wood than your smoker recommends.
