Preheat the oven to 375 degrees. In a large bowl, combine the ground beef, 3/4 cup breadcrumbs, milk, onion, parsley, thyme, salt, and pepper. Mix until just combined, then shape into a loaf and place on a baking sheet.
Sprinkle the remaining 1/4 cup breadcrumbs over the top of the loaf and press lightly to help them stick. Bake for 45 minutes until the internal temperature reaches 160 degrees.
While the meatloaf bakes, toss the carrot sticks with olive oil, salt, and pepper on a second baking sheet. Roast alongside the meatloaf for the final 25 minutes.
In a large skillet, melt the butter over medium heat. Add the garlic and cook for 1 minute. Add the spinach and stir until wilted. Pour in the heavy cream and simmer for 5 minutes until the mixture thickens slightly.
Remove the meatloaf from the oven and let it rest for 5 minutes before slicing. Serve slices with a portion of creamed spinach and roasted carrots on the side.
