Preheat the oven to 375°F and lightly grease a loaf pan.
In a mixing bowl, combine the ground beef, breadcrumbs, egg, onion, garlic, salt, and pepper until evenly mixed.
Press half the meat mixture into the bottom of the loaf pan to form an even layer.
Lay the sliced ham over the meat, then sprinkle the shredded Gruyère on top of the ham.
Cover with the remaining meat mixture and press gently to seal the edges.
In a small bowl, stir together the Dijon mustard and honey until smooth.
Brush the glaze over the top of the meatloaf.
Bake for 50 to 55 minutes until the internal temperature reaches 160°F.
Let the meatloaf rest for 10 minutes before slicing.
