Ingredienser

  • 1 pound ground turkey
  • 1 large egg
  • 1/3 cup plain breadcrumbs
  • 1/2 cup crumbled feta cheese
  • 1/2 cup finely chopped baby spinach
  • 2 tablespoons finely chopped red onion
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil, plus more for greasing
  • 1 cup dry couscous
  • 1 cup low-sodium chicken broth
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley

fremgangsmåte

  • Heat the oven to 375°F. Lightly grease eight cups of a standard muffin tin with olive oil.
  • In a large bowl, combine the ground turkey, egg, breadcrumbs, feta, spinach, red onion, oregano, garlic powder, lemon zest, salt, and black pepper. Mix gently just until combined so the muffins stay tender.
  • Divide the mixture evenly among the eight prepared muffin cups. Shape the tops lightly, without packing the mixture down. Bake for 20 to 25 minutes, until the centers reach 165°F.
  • While the muffins bake, bring the chicken broth and 1 tablespoon olive oil to a boil in a small saucepan. Stir in the couscous, cover the pan, and take it off the heat. Let it stand for 5 minutes.
  • Fluff the couscous with a fork. Stir in the lemon juice and chopped parsley, then divide it among four plates.
  • Let the meatloaf muffins rest for a few minutes before removing them from the tin. Serve two muffins with each portion of lemon couscous.

merknader

For tender muffins, mix the turkey just until the ingredients come together. If making the couscous ahead, fluff it again with a fork before serving and stir in a small splash of broth if it has become firm.
