Preheat the oven to 375 degrees and line a baking sheet with parchment paper.
In a large bowl, combine the ground turkey, spinach, 1/2 cup of the feta, breadcrumbs, egg, garlic, oregano, salt, and pepper. Mix until evenly combined.
Divide the mixture into four equal portions and shape each into a small loaf. Place the loaves on the prepared baking sheet.
Bake for 25 to 30 minutes until the internal temperature reaches 165 degrees.
While the meatloaves bake, bring a large pot of salted water to a boil and cook the orzo according to package directions. Drain well.
Return the orzo to the pot and stir in the lemon zest, lemon juice, olive oil, and remaining 1/4 cup feta.
Spoon the lemon orzo onto plates and top each serving with one mini meatloaf. Sprinkle with the chopped parsley before serving.
