Preheat the oven to 375°F. In a large bowl, combine the ground turkey, rolled oats, egg, half the chopped onion, half the minced garlic, thyme, salt, and pepper. Mix gently until just combined.
Shape the mixture into a loaf on a parchment-lined baking sheet. Spread the cranberry sauce evenly over the top.
Bake the meatloaf for 45 to 50 minutes, or until it reaches an internal temperature of 165°F.
While the meatloaf bakes, heat the olive oil in a large skillet over medium heat. Add the remaining onion and garlic and cook for 2 minutes.
Add the Brussels sprouts and carrots to the skillet. Cook, stirring occasionally, for 10 to 12 minutes until the vegetables are tender and lightly browned.
Remove the meatloaf from the oven and let it rest for 5 minutes. Slice and serve with the Brussels sprouts hash. Sprinkle with fresh parsley before serving.
