Preheat the oven to 375°F. Spread 1/2 cup red enchilada sauce across the bottom of a 9x13 baking dish.
Warm the chopped meatloaf in a skillet over medium heat for 3 to 4 minutes until heated through.
Warm the tortillas in the microwave for 20 seconds or in a dry skillet until pliable.
Fill each tortilla with about 1/3 cup meatloaf and 2 tablespoons cheese. Roll tightly and place seam-side down in the baking dish.
Pour the remaining enchilada sauce evenly over the rolled tortillas. Sprinkle the rest of the cheese on top.
Bake for 20 minutes until the cheese is melted and the sauce bubbles around the edges.
Remove from the oven. Sprinkle with cilantro and serve with sour cream on the side.
