Heat the oven to 350°F. In a mixing bowl, combine the ground beef, half the crumbled bacon, half the cheddar cheese, breadcrumbs, egg, milk, onion, salt, and pepper. Mix just until the ingredients come together.
Shape the mixture into a loaf and place it in a loaf pan. Scatter the remaining bacon and cheese over the top.
Bake for 45 to 50 minutes, or until the center reaches 160°F and the cheese on top has melted and browned slightly.
While the meatloaf bakes, melt the butter in a skillet over medium heat. Add the corn kernels, season with a pinch of salt and pepper, and stir until the corn is heated through and coated in butter.
Remove the meatloaf from the oven and let it rest for 5 minutes before slicing. Serve each portion with a scoop of the buttered corn.
