Preheat the oven to 375 degrees and line two baking sheets with parchment paper.
In a mixing bowl, combine the ground beef, diced onion, chopped pickles, ketchup, yellow mustard, half of the shredded cheddar cheese, and a pinch of salt and pepper. Mix until evenly blended.
Divide the mixture into four equal portions and shape each into a small loaf. Wrap two slices of bacon around each loaf, tucking the ends underneath.
Place the bacon-wrapped meatloaves on one baking sheet. Cut the potatoes into thin fries, toss with salt and pepper, and spread them on the second baking sheet.
Bake both sheets for 25 to 30 minutes until the bacon is crisp and the meatloaves reach 160 degrees inside. In the last five minutes, sprinkle the remaining cheddar cheese over the fries.
Remove from the oven. Top the fries with sour cream and sliced green onions, then serve alongside the meatloaves.
