Preheat the oven to 425 degrees and line a baking sheet with parchment paper.
In a large bowl, combine the ground pork, half the buffalo sauce, breadcrumbs, egg, garlic powder, salt, and pepper. Mix until evenly blended.
Divide the mixture into eight portions and shape each into a small oval loaf. Place them on the prepared baking sheet.
Bake for 18 to 20 minutes until the internal temperature reaches 160 degrees.
While the meatloafs cook, toss the sliced celery, shredded carrots, mayonnaise, and vinegar in a medium bowl. Stir in the blue cheese.
Drizzle the remaining buffalo sauce over the baked meatloafs and serve them with the celery slaw on the side.
