Divide the mixture into 8 equal portions and shape each into a small loaf. Place the loaves on the prepared sheet pan.
Bake for 20 to 25 minutes until the internal temperature reaches 165 degrees.
Remove the pan from the oven and let the meatloaves rest for 5 minutes. Drizzle with ranch dressing and sprinkle with the remaining celery and carrots before serving.
