In a large bowl, combine the ground chicken, 1/4 cup buffalo sauce, breadcrumbs, egg, celery, garlic powder, salt, and black pepper. Mix with your hands until the ingredients are evenly distributed.
Divide the mixture into 8 equal portions. Flatten each portion slightly, place one blue cheese cube in the center, and shape the meat around it to seal the cheese inside. Form into small oval loaves.
Place the loaves on the prepared baking sheet. Brush the tops with the remaining 1/4 cup buffalo sauce.
Bake for 25 to 30 minutes until the internal temperature reaches 165 degrees. Let them rest for 5 minutes before serving. Sprinkle with chopped green onions.
