Preheat the oven to 375°F and line a baking sheet with parchment paper.
In a large bowl, combine the ground chicken, ¼ cup of the buffalo wing sauce, panko breadcrumbs, egg, and garlic powder. Mix until evenly blended.
Divide the mixture into eight equal portions and shape each into a small loaf. Place the loaves on the prepared baking sheet.
Bake for 22 to 25 minutes, or until the internal temperature reaches 165°F. Remove from the oven and brush the tops with the remaining buffalo wing sauce.
While the meatloaves bake, stir together the sliced celery, blue cheese, mayonnaise, lemon juice, and black pepper in a medium bowl.
Let the meatloaves rest for 5 minutes before serving with a scoop of the celery slaw on top or on the side.
