Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
In a large bowl, combine the ground chicken, panko breadcrumbs, egg, buffalo wing sauce, blue cheese, salt, and pepper. Finely dice two of the celery stalks and add them to the bowl. Mix until just combined.
Shape the mixture into a loaf about 8 inches long and place it on the prepared baking sheet. Bake for 35 to 40 minutes until the internal temperature reaches 165 degrees F. Let the meatloaf rest for 5 minutes before slicing.
While the meatloaf bakes, thinly slice the remaining two celery stalks. In a serving bowl, toss the romaine lettuce and sliced celery with the ranch dressing.
Serve slices of meatloaf alongside the celery ranch salad.
